Winemaking process: The alcoholic fermentation starts in oak barrels, the latter are seasoned by us, a week after the run-off. The malolactic fermentation is blocked.
Blending technique: To elaborate this wine, we select the oldest and the youngest patches of vine from Le Mesnil-sur-Oger. This selection allows us to find the best balance between substance and vigour. We treat each year as a vintage by blending a unique year.
